Lime

The word Lime conjures up all manner of gourmet delights, but the one that springs to mind first is the slice that is perched on the side of a salt-rimmed glass filled with crushed ice and Margaritas! The tequila and lime mix has to be the world’s best. 

The lime is rarely consumed on its own. Limes are second only to lemons in terms of importance as a flavouring agent for foods, drinks and other, non-edible, products for home and industrial use. The use of lime juice and lime zest to enhance the flavour of rice, potatoes, salads, and cooked vegetables will cut down the amount of salt you need to use, and eliminate the need for adding fat. Lime juice is excellent in marinades, beverages, salad dressings, guacamole, seafood and barbecue sauces, fish and meat stews, sorbets, jams, and let us not forget Key Lime pie.

Standard. Beautiful glossy green aromatic foliage, delicious green skinned, seedless fruit full of juice that can be used from spring onwards. Fragrant blossoms and thornless branches all make for a winning combination. Plant in a sheltered, sunny position in the garden or a container. Evergreen.

While it is common to use Limes when they are green they are actually fully ripe when they turn yellow like a Lemon. They will fall naturally from the tree once ripe.

Lime Kaffir

The essential Lime to use for culinary purposes as all parts of the 'Kaffir' are strongly aromatic especially the unusual 'double' leaves - these are a vital ingredient in Thai and Indonesian cuisine. The fruit are green, rough and 'warty' and not particularly juicy. Evergreen.

The word "Kaffir" is Arabic for infidel or what Muslims used to call unbelievers. How it became associated with a Lime tree I have yet to discover. However in this case it has no relation to its use as a derogatory term in some cultures.

Lime Kusaie

A popular Lime for ornamental and culinary purposes. The fragrant white blossom has an attractive pink tinge. Aromatic foliage and fruit that is quite a deep yellow when ripe. The peel is easy to remove. Yellow juicy flesh which has a well balanced mild acidity. Evergreen.

This Lime originated in India but made its way to Hawaii around 1885. It is a common garden plant there and it is also very popular in Trinidad. It is more cold hardy than many Limes but is still best protected from harsh frost.

Lime Limequat

An interesting Citrus that is a cross between a Lime and a Kumquat hence the name. Excellent bearing properties with regular heavy crops of oval lemon fruit that are juicy, acidic and full of Vitamin C. Can be grown in a container or in the garden in a sunny well drained position.

The Limequat fruit is very popular for culinary purposes and can be used as you would a lemon or a lime. The fruit doesn't have pips.

Mexican or Key Lime. Flowers and fruits almost continuously if grown in a nice warm sheltered position. The fruit is small and round and yellow when completely ripe. Ideal for container growing. Needs protection from frost. Popular for culinary purposes. Evergreen.

Limes can be used green when they are considered immature right through to when they turn yellow when they are fully ripe. The most tangy 'Lime' flavour is obtained when the fruit are half way between and are coloured a yellow-green.
