1 lg Onion
2 cups parsley
4 cups chicken stock
1 oz butter
1 large potato
salt & pepper
Chop onions and parsley, boil for 30 mins in the chicken stock.
Rub through sieve or blender (or do nothing which I do)
Melt the butter and stir in the flour.
Add the parsley liquid and season.
Cube the potato, cook in the milk and simmer. When cooked mash and add to parsley.
