The old boy made these the other day and they are damn good. He got the recipe from a friend and we all know how recipes get handed around and this particular one originated from the renowned Wayne Good of Clanfield Interiors in Cambridge. We had some of our clients call in the other day who were off to one of his famous Christmas cuisine demos. There is still time to get in a batch of baking to fill those tins for all those guests that call in over the holiday season.


Orange Pastry

500 gm plain Flour
175gm Icing sugar
375 gm softened Butter
1 orange grated
1 to 2 oranges for juice
Place the flour and Icing sugar into a food processor and add the butter. Process until it resembles fine bread crumbs
Tip into a large bowl adding the orange rind and finally the juice of the oranges mixing with a knife to form a nice dough
Wrap in gladwrap and refrigerate for at least 30 minutes

The Pies

250 gm cream cheese
50gm Castor sugar
500 gm good fruit mince
Spray oil
Milk to glaze
Sugar and cinnamon sprinkle
Mix the cream cheese with the sugar and set aside
Roll out the pastry. Slightly thicker than the usual and uses pastry cutter to cut into the size that you require
Line well greased tins with pastry and half fill with the fruit mince. Place a blob of cream cheese on each pie and cover with a lid of pastry
Brush with milk and sprinkle liberally with sugar and cinnamon sprinkle
Bake in a hot oven (approx. 220c) until golden brown
